COS, Sicily, amphora and biodynamics

One of the wine producers on Sicily that has been much talked about recently is Giusti Occhipinit at COS. the main reason is of course that he makes excellent wines, but it is also because he is one of the wine producer who are experimenting with making wine in amphora. “Clay is like oak”, he says, “the wine breathes but the advantage with clay is that it gives no taste to the wine.” He is also both organic and biodynamic.

Some time ago we visited Giusti at his winery. We also tasted many of his wines. You can read more about the winery, the vineyard, and about his wines on BKWine Magazine: COS – biodynamics and amphora in Sicily.

But COS is just one of many exciting wine producers on Sicily. This autumn we organise a wine and food tour to Sicily (on our Scandinavian program, and also available as a custom tour in English) which will give an excellent insight in both the wines and the gastronomy of Sicily.
